I love Brussels sprouts and I love pomegranates. Put those two ingredients together with feta and pumpkin seeds and you have got yourself a winning dish! Shaved Brussels Sprout Salad with Pomegranates, Feta, Pumpkin Seeds, and a Citrus Dressing...
4 Large Handfuls of Brussels Sprouts, shaved thin
1 Cup of Pomegranate Seeds (save some for garnish)
1/3 Cup of Pumpkin Seeds (save some for garnish)
1/4 Cup of Feta, crumbled (put on last)
1 Lemon, Juice and zest
½ Orange, Juice Only
1 Tablespoon of Yuzu Vinegar (Whole Foods)
4-5 Tablespoons of a Good Olive Oil
1 Clove of Garlic, Left whole to infuse and remove before using
2 Large Pinches of Sea Salt and Freshly Ground Pepper
1. Slice the brussel sprouts so they are thinly shaved. Add in the lemon zest, pomegrantes, and pumpkin seeds.
2. In a blender, put the lemon juice, yuzu vinegar, orange juice, salt, and pepper. Blend the ingredients and then drizzle in the olive oil slowly. When it has blended, taste for seasoning.
3. Pour the dressing on the brussels before serving and toss. Taste again for seasoning. Put the salad in a bowl and garnish with the pomegranes and pumpkin seeds. Sprinkle the feta on top of the salad. Give a grind of pepper on the top.
