Green Sauce: Avocado, Tomatillo, Jalapeno, and Mint Salsa Verde
I think this might be one of the best sauces I have ever made. It’s so simple and can be served with so many different foods. I created it because I was looking for a new and different sauce to go with my fish tacos. It is amazing on eggs, delicious with grilled chicken and lamb, and killer on fish tacos.
All you have to do is blend the ingredients and you are set to go. It doesn’t have to be cooked. Just serve it with its bright green color and it will be a big hit!
Here are the ingredients…just blend them until they are smooth. If it is too thick just add a little water…
Makes 2 Cups
½ Large Ripe Avocado
2 Tomatillos, peeled, washed
2 medium Jalapenos, stems and seeds removed
1 Small Head of Cilantro, Sprigs only (its ok to have some stems they taste good!)
10 Sprigs of Mint
½ Bunch of Scallions
2-3 Pinches of salt
2-3 Large Juicy Limes, juice only
